Use a 9 x 13 pan.
Base:
3/4 cup butter cut in chunks
2 1/4 cup flour
3 tbsp icing sugar
Combine butter, flour & icing sugar. Process until well blended, about 20 seconds. Press into the bottom of lightly greased pan. Bake at 350 for about 20 minutes.
Topping:
2 1/4 cups brown sugar lightly packed
3/8 cup melted butter
3 eggs
1 1/2 tbsp vinegar
1 1/2 tsp vanilla
1 1/2 cup raisins
Process all ingredients except raisins until well mixed. Add raisins and blend in with 1-2 quick on/off turns. Pour over base. Bake about 30-35 minutes longer, until nicely browned. Cool & cut into squares.
Raisins may be replaced be pecans. If so sprinkle pecans directly onto base, then pour topping over.
May be frozen.
