Oatmeal Chocolate Chip Cookies

OATMEAL CHIP COOKIES

Butter or margarine, softened 1 cup 250 ml
Brown sugar, packed 2 cups 500 ml
Eggs 2 2
Vanilla 1 tsp. 5 ml
All-purpose flour 2 cups 500 ml
Baking powder 1 tsp. 5 ml
Baking soda ½ tsp. 2 ml
Rolled oats 2 cups 500 ml
Semisweet chocolate chips 2 cups 500 ml
Raisins ¾ cups 175 ml

Cream butter and sugar together. Beat in eggs 1 at a time. Add vanilla.

Add remaining ingredients. Mix well. Drop by spoonfuls onto greased baking sheet. Bake in 350 F (180 C) oven for about 8 to 10 minutes. Makes 5 dozen.

Great-Grandma Johnson's Walnut Cake

1/3 cup margarine or shortening
1 cup brown sugar
2 eggs
1/2 cup milk
1 1/2 cup flour
2 tsp baking powder
1 cup chopped walnuts
1/2 tsp salt
1 tsp vanilla

Cream margarine and brown sugar together. Add eggs and beat well. Add dry ingredients and mix well. Add milk and vanilla. Fold in walnuts. Bake in a 9x9 pan at 350 degrees for 30 to 40 minutes or until done.


Maple Butter Frosting

1/4 cup butter
2 1/2 cups icing sugar
3 to 4 tablespoons milk

Cream butter. Gradually add icing sugar and milk alternately, to make of spreading consistency. Add more icing sugar and milk if necessary. Add maple flavouring to taste.
