Layered Taco Dip

1) Bottom Layer: 1 package of cream cheese mixed with an equal amount of sour cream, add either Taco Seasoning (or I like to do my own mix of spices usually a combination of chili pepper spice & cumin)
2) Layer 1 can of brown beans (I usually get the ones with just tomato sauce to keep it vegetarian)
3) Layer of fresh spinach chopped (some people use lettuce)
4) Layer of chopped red peppers (or green)
5) Layer of chopped tomatoes
6) Layer of chopped green onions
7) Layer of grated cheese

Serve with tortilla chips.

Toffee Bits Triangles

1 cup butter or margarine, softened
1 cup packed brown sugar
1 tsp vanilla
1 egg yolk
2 cups all-purpose flour
1 1/4 cups Chipits Skor toffee bits
1 pkg Chipits semi-sweet chocolate chips

Heat oven to 350 degrees.

In a large bowl, beat butter and brown sugar until fluffy. Beat in vanilla and egg yolk until creamy.

Add flour and 1 cup of the toffee bits. Press into an ungreased jelly roll pan.

Bake for 18 to 20 minutes, until light brown. Immediately sprinkle chocolate chips over top. Let stand until softened, about 5 mintues: spread evenly over top. Sprinkle with remaining toffee bits. Let cool completely. Cut into 3 in. squares: cut each square diagonally into 4 triangles.

Zucchini Bread with Spices

Zucchini Bread with Spices

Ingredients:

• 1 cup all-purpose flour
• ½ cup whole wheat flour
• ½ teaspoon salt
• ½ teaspoon baking soda
• ¾ teaspoon baking powder
• 1 teaspoon ground cinnamon
• ¼ teaspoon ground nutmeg
• 1 large egg
• ½ cup Canola oil
• 1/3 cup applesauce
• ½ cup granulated sugar
• ¼ cup packed brown sugar, light or dark
• 2 teaspoon vanilla extract
• 1 cup shredded zucchini, about 1 medium zucchini
• ½ cup finely chopped walnuts or pecans

Preparation:

Heat oven to 325 °. Grease and flour an 8 ½ X 4 1/2 – inch loaf pan.

Measure the flour, whole wheat flour, salt, baking soda, baking powder, and spices into a bowl. In a mixing bowl, beat egg with oil, applesauce, sugar, and vanilla extract until well blended. Slowly beat in the flour mixture until blended. Fold in zucchini and nuts.

Spread batter in the prepared loaf pan and bake 45 to 55 minutes, until a toothpick or cake tester inserted into the center comes out clean. Cool on the rack before slicing.

N.B.: This recipe makes one loaf of zucchini bread.

Raspberry Trifle

1 can Eagle Brand condensed milk (full fat, baby!)
1 1/2 cups cold water
1 pkg vanilla instant pudding - 4 serving size
500 ml whipping cream, whipped
1 can raspberry pie filling
1 pkg frozen pound cake (Sara Lee), thawed and cubed

In a large mixing bowl, combine Eagle Brand and water. Add pudding mix and beat well. Chill for 20 minutes until thick. Fold in whipped cream with a light hand!

Layering order

2 cups pudding mixture
1/2 of cake pieces
1/2 of pie filling
1/2 of remaining pudding mixture
all of remaining cake pieces
all of remaining pie filling
all of remaining pudding mixture

Oatmeal Chocolate Chip Cookies

OATMEAL CHIP COOKIES

Butter or margarine, softened 1 cup 250 ml
Brown sugar, packed 2 cups 500 ml
Eggs 2 2
Vanilla 1 tsp. 5 ml
All-purpose flour 2 cups 500 ml
Baking powder 1 tsp. 5 ml
Baking soda ½ tsp. 2 ml
Rolled oats 2 cups 500 ml
Semisweet chocolate chips 2 cups 500 ml
Raisins ¾ cups 175 ml

Cream butter and sugar together. Beat in eggs 1 at a time. Add vanilla.

Add remaining ingredients. Mix well. Drop by spoonfuls onto greased baking sheet. Bake in 350 F (180 C) oven for about 8 to 10 minutes. Makes 5 dozen.

Great-Grandma Johnson's Walnut Cake

1/3 cup margarine or shortening
1 cup brown sugar
2 eggs
1/2 cup milk
1 1/2 cup flour
2 tsp baking powder
1 cup chopped walnuts
1/2 tsp salt
1 tsp vanilla

Cream margarine and brown sugar together. Add eggs and beat well. Add dry ingredients and mix well. Add milk and vanilla. Fold in walnuts. Bake in a 9x9 pan at 350 degrees for 30 to 40 minutes or until done.


Maple Butter Frosting

1/4 cup butter
2 1/2 cups icing sugar
3 to 4 tablespoons milk

Cream butter. Gradually add icing sugar and milk alternately, to make of spreading consistency. Add more icing sugar and milk if necessary. Add maple flavouring to taste.

Butter Tart Slices

Use a 9 x 13 pan.

Base:

3/4 cup butter cut in chunks
2 1/4 cup flour
3 tbsp icing sugar

Combine butter, flour & icing sugar. Process until well blended, about 20 seconds. Press into the bottom of lightly greased pan. Bake at 350 for about 20 minutes.

Topping:

2 1/4 cups brown sugar lightly packed
3/8 cup melted butter
3 eggs
1 1/2 tbsp vinegar
1 1/2 tsp vanilla
1 1/2 cup raisins

Process all ingredients except raisins until well mixed. Add raisins and blend in with 1-2 quick on/off turns. Pour over base. Bake about 30-35 minutes longer, until nicely browned. Cool & cut into squares.

Raisins may be replaced be pecans. If so sprinkle pecans directly onto base, then pour topping over.

May be frozen.
